Welcome to another installment of Smoothie Saturday! This week I am trying something a little different – a green smoothie. I love the fruit smoothies I have been making lately – they make me think I am drinking a milkshake every morning. But if I want to have two smoothies in one day, it’s nice to mix things up a bit and introduce different flavors and ingredients.
A green smoothie is a great way to introduce spinach, kale, or a combination of power greens into your diet. Why are these good for you? They are packed with iron and will give you tons of energy. Think Popeye, just without the pipe. This smoothie also will give you a huge punch of protein and fiber for your day. I like to have a fruit smoothie in the morning, and then this green smoothie for lunch to give me a jolt of energy to get me through the afternoon.
Pick your greens depending on your taste preference. Kale and power greens are going to have a stronger more peppery kick to them. Spinach will have a milder taste.
If you really like the extra kick of flavor, you can add a dash of cayenne pepper or paprika to this smoothie.
This recipe calls for half a cucumber and a Granny Smith apple. I peel my cucumber and apple before blending as I do not like the texture of the smoothie with the peel left on. If it doesn’t bother you though, go for it with the peel left on to add some more fiber to your smoothie.
I add a banana (ripe or frozen) to give the smoothie a bit of creaminess. You can leave this out though if you are not a fan of bananas.
You also can throw in a drizzle of honey if you want a little sweetness.
This recipe makes one large smoothie.
